I need a bigger spoon

Brand-new freshly-cured 7.5 quart cast-iron dutch oven + 2 pounds sausage + 3 cups rice + 2 onions + 2 bellpeppers + 2 cups celery + 5 cloves garlic + crapload of spices + 40 minutes cooking = MEGAJAMBALAYA. I still need to titrate these spices right, scaling everything up is tricky. but oooooooooooo ooo o I like it. It beats the crap out of that aluminum dutch oven, and this new one won't give me alzheimer's, either!

I found a great sausage recipe that is so ridiculously easy and goooooooooooooood:

1lb smoked venison sausage (thats what I used but any can used I think)
3 jalapeno peppers
1 green pepper
1 lg onion
1/4cup tabasco
10 jar of sweet and sour

I do it on the grill but I am sure it would work in a dutch oven too.

slice sausage, green pepper, onion into bite size chunks
slice jalapenos
{my recipe is to put in foil bag and put on grill{

I bet you can just dump it all into the pot.

add 1/4 hot sauce and 10 oz of sweet and sour

let get to temp and eat!

waaaaaaaaaaaaaaaaay better than I ever thought it would be!

Hmmm.. sweet and sour sauce? I'll have to give it a try.. I'll have to find some venison sausage first. Maybe andouille will work too.. Thanks for the recipe!
